Okay, so the focus is just on making it not visible to the cashier. Is there any way to make it not visible at all - i.e., in Items - as what happens when an Item is deleted?

It's a little tricky to figure out which category of report to use for which detail you're looking for. For a specific item, it looks like you'd look in Reports/Inventory Reports/Detailed Reports....
