Exclude an Item or Category from Sales Transaction

Assuming I want to offer my customer cash back. Customer wants $40 back so I'll charge the credit card $41.50 with fees. This type of transaction is not a sale and I want to omit it. Is there a way to exclude an item or a category from a sales transaction?
