Item Variation
Is it possible that when someone scans an item an option appears to allow the variations to be selected, eg- if I am charging a separate prices for cold drinks, then the cashier should be given the option to select either hot or cold once they scan a drink, based on the selection the price will be attached accordingly.

Yes! We allow for this, if you setup your item to have 2 variations of hot a Cold you can choose this. In the pricing section you can put different prices also

The variation choice will be empty. But to force cashiers to select them you can check the following store config option “Do NOT Allow Variation Items To Be Sold Without Selecting Variation:”

One more question could I do tier pricing based on a global percentage and also do my markup based on category by percentage
Tiers can setup globally in store config but markup cannot
