Year End Inventory

We have over 20k items in our inventory, and the categories are not all together in the store, so we don't count by category.  At the end of the year, we move like items together (so that one person counting in one place doesn't overwrite someone counting in a second location.)  I'd like to download the "Items not Counted & in Stock" report to compare to our count.  

1. Is there a way to specify a date that something was/wasn't counted in a report?  

2. Is there a way to download that report?  So far I've found it will only print to a pdf, which I can convert to a tiff, which I can copy and paste into a spreadsheet - one page (of 67) at a time.  Anyone have a better way?   

3. Is there a way to count Item Kits, so that the items within those kits get counted - without having to disassemble the kits and put all the contents with like items so they get counted at the same time and then reassembling the kits?
